Hi, I’m Lisa Jane and just a very busy, working mum who also loves to cook.
I’m lucky that I was brought up by parents who knew how to stretch meals, and I learned by watching from an early age that being frugal and careful with meal prep and planning could be beneficial. Having my own home at age 18 and having to pay a mortgage quickly made me realise that shopping, planning and preparation is valuable skill! In this climate, it’s so valuable to learn how to cook and really make sure you’re getting the most out of your money.
As someone who works long, unpredictable hours it also comes in handy to be prepared and always have good, homemade food from batch recipes that can be whipped out of the freezer and heated up. I also have a few good recipes that are cheap, nutritious and can be prepped, cooked and on a plate within 20-30 minutes of walking in the door. So much easier than a takeaway and often much better tasting.
I love variety, and also have a family who suffer from food allergies and intolerances, so have learned that cooking from scratch not only saves money but is also better for you and is much easier in the long run. I love to adapt recipes to be healthier for fakeaway nights when I’m trying to lose a few pounds, as well as enjoying more indulgent recipes. I’m hoping to share some of my family favourite recipes and ways we eat lovely food and stretch our budget, and learning from Pat’s page as I go ☺️
