Double Decker Scones

Vegan and vegetarian double decker scones

These are my Double Decker Scones.

I roll mine thinner and stack them in twos so they slice really easily without making lots of crumbs or breaking.

This is how my Mum taught me. I made these Vegan so used Vitalite and oat milk but you can also use any baking margarine or baking fat.

Any plant milk or cow’s milk can be used.

If you want to add some dried fruit or cheese just throw in a handful or two.

I served these with homemade jam. Makes 12 scones.

Ingredients

  • 459g/16 oz self raising flour
  • pinch of salt
  • 110g Vitalite
  • 25g/1oz caster sugar
  • 300 ml/10 fl oz oat milk I also added a good teaspoon baking powder
  • Gas 5

Method

  • Rub in the fat into the flour/salt/baking powder
  • Add sugar
  • Blend in the milk gradually forming to make a dough.
  • Make sure it is not too sticky-you need to be able to roll it.
  • Put the oven on to heat
  • Roll the mixture on a floured surface and cut out rounds approx 1 cm deep.
  • Brush the top of one round with a little milk and put another round on top pressing down gently.
  • Brush tops with a very small amount of milk
  • Bake. Gas 5
  • Transfer to a wire rack to cool.

Side note: these can be frozen

    First time doubling up scones. I added sultanas dessicated coconut and choc chips just because they needed to be used. I will post pics on fb. Thank you for the inspiring me 🙂
