Ingredients
- 12 oz dried mixed fruit-you may vary this as you wish
- ¼ (one quarter) pint strong tea
- 8 oz Self-raising flour
- 3 oz Demerara sugar
- 2 teaspoons mixed spice
- 2 eggs
Method
- 2 large eggs beaten
- Soak fruit in tea overnight
- Mix flour, sugar and spice together
- Mix the eggs and the fruit together
- Add the dry ingredients to the wet ingredients and mix well together.
- The mix should hold together-not be runny.
- If too stiff-add a little water. If too wet-add a little flour
- Turn the mixture into a lined greased 2 lb loaf tin
- Bake just above the centre of the oven at Gas mark 4, 350 f or 180 c for about 75 minutes.
- Test with a serrated knife or a skewer which needs to come out clean-not sticky.
I tend to make a double amount and freeze one loaf. This can be eaten on its own or with butter on it.
You can add variations to the fruit mixture such as dried apricots, dates, figs, glace cherries.
I like to decorate mine with glace cherries.
