I watched a video the other day on making a super salad from scratch. The guy referred to it as a millionaires salad-not because it is expensive, but because it has so many things in it that you will never find in a shop-bought salad. Otherwise known as a bigass salad.
Anyway-watching that video inspired me to write this blog about my salad today. Especially useful if you are growing carrots, watercress and radishes.
As he said-every salad is very different and you make it up as you go along. There is no recipe and there are no rules-only ideas.
One of the things I did like was his carrots which looked prettier than little sticks or julienne carrots. It made grated carrot look simply boring.
The carrots look like little flower petals and it is really easy to achieve.
Clean your carrot, peel, chop off the ends then cut in half so you now have two short carrots. Using a sharp knife cut out a wedge the length of the carrot-only a very thin one. Repeat this 3 or 4 times and do the same for each carrot half. Next, you just need to slice your carrots and you will have pretty little carrot petals.
What is in my salad today?
I had some Iceberg lettuce in the fridge so that was my first ingredient.
I’ve been growing watercress and radishes so have used radish leaves(not radishes)and watercress.
I am growing carrots so I’ve trimmed off a little bit of a couple of carrot tops (the green ferny part)
If you buy your carrots on the bunch do remember you can eat the tops as well. Root to shoot is edible.
I also added small yellow bell pepper, a small red chilli pepper, 2 homegrown tomatoes and half a red onion.
I’ve still got to add some rocket I bought and some homegrown cucumber.
I am storing it in a plastic box with a lid in the fridge. Don’t add any dressing if you are going to store it. Only dress the salad when you are ready to eat it.
Home made Salad Dressing
Well, the list is endless of what you can make and it really depends on what you have in your cupboard or fridge.
A very simple dressing is:
- Olive oil/Vegetable oil
- Lemon juice
- black pepper
- honey
I’ve now tubbed it up to have later. I find it best to add cucumber last as it can go a little bit soggy.
