A lovely zesty flavoursome way to serve chicken.
Ingredients
- 3 red chillies chopped (add these according to your preference)
- 1 large red pepper
- 5 cloves garlic chopped
- 1 teaspoon smoked paprika.
- 1 tablespoon of basil.
- 1 tablespoons of sumac
- .1 tablespoon of cayenne pepper.
- 1 tablespoon of thyme
- 1/2 cup olive oil
- The juice of.I lemon squeezed
- Salt and black pepper to taste
Method
- Add all the above ingredients to a food processor for roughly (5 minutes).
- Pour the sauce all over your chicken.
- Place your chicken covered with cling film in the fridge for 2 hours
- Create the same sauce again with only 1/2 of the ingredients and set aside
- Place your chicken in an ovenproof dish covered with foil paper.
- Leave for 1 hour at 220 degrees
- Remove foil and pour the remaining sauce over the chicken and place under the oven grill on high for 25 mins until golden brown.
- Serve with Pitta and salad or mashed potatoes and roasted vegetables! The choice is yours.
Tips
If you want to create the seared lines on chicken, once you have taken it out of the oven after cooking.
Score it 4 times and place it for 90 seconds onto an oiled, hot griddle pan with ridges on it, and press down with a tong.
