Rice Pudding

rice pudding

This is a recipe for a nice thick one. If you prefer it thinner, use less rice.

Ingredients

200g of arborio rice

80g of granulated sugar

1 teaspoon vanilla extract

1 litre of milk

1 teaspoon approx ground nutmeg

Method

Grease a large casserole dish and add the rice and sugar.

Add the milk and then the vanilla extract. Sprinkle the nutmeg over the pudding.

If you want to speed things up, add the dish to the microwave for about 5 mins. Then put it in the oven on the second shelf. I start it at gas 4 if I’ve not heated it in the micro then turn it down to gas 2 after half an hour.

Otherwise, put it in the oven gas 2. It will take a couple of hours to cook. However, it is using very little gas.

***I cooked mine on a higher temp today and put it in the bottom of the oven (coolest part) with my lasagne and quiche above it. If you have an electric fan oven, it should be the same heat throughout though so stick with low heat. this makes a very thick pudding. After cooking I let it sit and swell. If you like it a bit runny and not thick, use 150g of rice instead of 200g***

    1. No reason not to freeze rice pudding. Thaw naturally, give it a good stir then eat it hot. Make sure that if you are going to freeze it that you chill it as quickly as you can and freeze asap.

  1. Rice pudding recipe,I found the cooking instructions a little confusing! Was the instruction If you want to speed up,add dish to microvave for 5 mins,then put into oven on 2nd shelf.GAS 4 IF NOT started in the microwave,then turn down to gas 2 after 30 mins.
    Otherwisw put into oven Gas2 for a couple of hours etc
    Was the first instructions meant to read if you HAD put into microwave first please?

    1. I will come back to this and reword it. I see what you mean. I suggest just putting it in the oven on gas mark 4. I suggest maybe turning it down to gas 2 after half an hour.
