Beany bhajis

Ingredients

  • 1 onion
  • 2 carrots
  • 2 cloves garlic
  • One tablespoon curry powder
  • A little water
  • 1 tin of butter beans
  • Salt and pepper
  • Chopped coriander

Method

  1. Finely slice an onion and grate and a couple of carrots.
  2. Saute them in a shallow pan, in a small amount of oil with 2 cloves of garlic (chopped or minced) until the veggies begin to soften, then add a splash of boiling water and a tablespoon of curry powder and simmer until the water has evaporated and the veggies are soft. This only takes a few minutes.
  3. Drain and mash a tin of butter beans, and add the cooked onion/carrot mixture, some salt and pepper and (optional) some freshly chopped coriander. Mix to combine.

To Finish

Form into 6 patties (wet hands helps).

If oven baking, place them onto a baking tray lined with baking parchment or a non-stick sheet and spray lightly with spray oil. Bake for 15 – 20 mins at 180 degrees fan, or until the outside goes slightly crispy.

You can also shallow fry them in a small amount of oil, for 3 – 4 minutes on each side.

Serve with homemade raita: use vegan or vegetarian natural yoghurt mixed with shop-bought mint sauce, or alternatively, you can add chopped fresh mint & a touch of sugar, to your preferred taste.

The beany bhajis are also delicious with sweet chilli sauce.
