Middle Eastern Chicken Biryani
Ingredients
- In a large bowl add your preferred chicken pieces, enough to serve 4
- Add 2 tablespoons of yoghurt.
- 1 teaspoon of garam masala.
- Half a teaspoon of turmeric.
- Half a teaspoon of smoked paprika.
- Half a teaspoon of salt.
- 1 tablespoon of tomato paste.
Method
- Mix together.
- Cover with cling film and leave in the fridge for a minimum of 30 minutes
- Rinse two cups of rice roughly 3 times until the water is clear
- Fill your bowl with more water and leave for 30 minutes to soak
- Heat 2 tablespoons of oil.
- Add 2 Bay leaves.
- 4 cardamon pods.
- Half a teaspoon caraway seed.
- A quarter of a cinnamon stick.
- Fry for roughly 2 minutes.
- Add 1 sliced onion and fry for a further 2 minutes
Next Step
- Add your chicken pieces and the sauce on top of your fried onions and fry for roughly 5 minutes
- Lower heat completely down and leave until chicken is cooked roughly (30 minutes)
- Once the chicken is cooked, taste to see if more salt is needed
- Layer your rice over your chicken (don’t mix). Add 3 cups of water and bring to boil
- Lower heat and leave for a further 15 minutes until rice is cooked
- Serve with Greek yoghurt and salad
