There are many brands on the market, but let’s go posh. No, not branded, not Harrods or dinner at the Ritz, but home made!

Tonight-it is Beans on Toast! Not your normal variety though as these are home cooked Haricot Beans. This is the bean you get in your can of baked beans in the supermarket. The weight of the product is about 2 kilos so approx equal to 7/8 loaded tins.

Ingredients

Served on homemade bread.

One packet of Haricot beans (soak these overnight)

2 courgettes (optional)

3 onions

Worcestershire sauce (About a tablespoon)

2 tins toms -one Cirio and one cheap one (the branded ones are more dense in flavour)

1/4 tube of tomato puree 9p. If using unbranded tomatoes, use extra puree

3 teaspoons mustard-optional

Salt and pepper to taste

2 teaspoons hot chili powder

2 teaspoons garlic powder

This works out equivalent to a pretty average can of beans costwise but of course, it is a far from an average dish cooked this way!

I will freeze these in portions for future use as this is not something you can knock up in five minutes.

The beans were soaked in water overnight, rinsed, and cooked for about 20 mins prior to adding and cooking with the rest of the ingredients. You could cook this in a pressure cooker or instant pot but I don’t know the timing for that.

If you wish to saute your onions and courgettes by all means do so this is just a matter of preference.

Once boiling, I’d cook for about 20 mins on a stovetop to absorb flavours. If the sauce looks a bit thin, cook longer and let the steam escape to reduce it. However, once left to cool it does thicken up and reduce.

I only added the courgettes because I bought them on promotion last night. The mixture has soaked up the juices a bit since I took the photo.
