This makes a good lunch or supper dish and is a great way of using up meat and vegetable oddments you have lurking in your fridge.
Feel free to swap ingredients to suit what you have available. If you wish to make a Vegetarian version just swap the bacon for a vegetarian food of your choice
If you can get bacon scraps (cooking bacon) bacon offcuts then those are a cheap substitutes, I only used bacon because I had 2 slices I wanted to use up. You could also use ham, pepperoni, salami, chopped sausage, or whatever you like. This recipe is a starter for you to adapt.
Ingredients
2 rashers of bacon
1 medium onion
1 red pepper
3 mushrooms
A little oil to fry
8 slices of bread
(I used 6 and a hot dog roll broken up)
Spread to butter your bread
Mustard. this is optional but we love it
salt and pepper to taste
Cherry tomatoes to decorate if desired, or sliced tomatoes.
125g of mature cheddar cheese
400 ml milk blue top full cream is best but they all work
3 eggs
Method
Chop the veggies
Fry the bacon in a little fat and add the chopped onion.
When the bacon is half cooked, add the chopped pepper and mushrooms
Fry until soft and the bacon is fully cooked.
Remove the bacon and cut it up into cubes.
While the veggies are cooking, butter your bread then spread 4 slices with mustard as well if you wish to.
Place the bread, buttered sides together to make 4 sandwiches and cut them into triangles.
Place these in a buttered dish
When the veg is cooked, sprinkle it over the sandwiches in the dish along with the chopped bacon.
In a jug,beat 3 eggs then beat in 400 ml milk
Pour this over the bread in the dish
grate your cheese and sprinkle over the bread
sprinkle with salt and pepper as you wish
Dot some baby tomatoes around it for extra flavour.
Suggestion: You could add a little chili flakes also if you wish.
Bake at gas 5 for approx 30 mins electric 190c but 170 c fan oven
Cook for approx 30 mins depending on type of oven
