I’ve just made up a bowl of coleslaw minus the mayo. If you add the mayo only as you need it, by putting just some of it into a small bowl it will keep better.

If it doesn’t get eaten, you can make soup with the ingredients instead.

Ingredients

approx 1/5 of a white cabbage sliced and chopped finely 10p

one medium carrot chopped in a food processor 5p

1 small onion chopped in a food processor 5p

1/3 of a red pepper-just because I’ve got one 15p

Mayo-about 1/4 of a jar 15p approx. You could mix this with plain value yogurt to make it cheaper and make it go further.

Total cost was about 50p. Cannot be compared with anything you buy premade!

Make it your own

I may add sweetcorn to it, or to some of it, and also beetroot, maybe some chopped apple, and a dash of lemon juice.

I will serve this with a boiled egg, possibly some home-cooked gammon ham, and some of my homemade bread.

Just use what you have if you want to make this super cheap. The white cabbage is good value as can be served in many ways.

I’ve just weighed it and it is 350g without the mayo. If I added half a jar of mayo 250g I’d have 600g the equivalent of 2 tubs of ~Tesco finest which is £1.50 a tub. so £3 worth of coleslaw for 65p approx.

Keep it longer

To make this last longer in the fridge, keep it covered and only add mayo when you are about to use it. I mixed some up for lunch in a separate bowl. This also gives you the freedom to use different dressings.

I have today made coleslaw, i put in onion spiced thinly then chopped, carrot grated and white cabbage thinly sliced and chopped as a bit of a bite I added two slices of gerkin and chopped finely too. Didn’t have red pepper but I have a little green, I might just chop this and add as I go. I have kebab meat tonight, in wraps, this will be a nice addition
