Turkish halloumi and olive loaf

Ingredients

  • 4 eggs
  • 250 ml milk
  • 20 ml vegetable or sunflower oil
  • 1 tbsp dried mint
  • 4 tbsp coriander chopped
  • 1 finely chopped onion handful of chopped black olives
  • half (halloumi) grated
  • 25 g grated (halloumi) to add on top)
  • 340 g self raising flour
  • 1 tsp baking powder
  • 1 tsp sesame seeds to add on top

Method

  • Preheat oven to 180 degrees
  • line your loaf tray with parchment paper
  • In a large bowl, whisk eggs, add milk and oil, whisk in flour and baking powder until there are no visible lumps at all.
  • Add onion, olives, halloumi, coriander, mint, and stir.
  • Pour into the tin, sprinkle on a handful sesame seeds all around then the grated halloumi.
  • Bake for 50 minutes or until knife comes out clean.
