Turning Cooking Bacon into Gammon Ham

I bought some cooking bacon the other day which I knew was actually 3 pieces of gammon. As a result, I didn’t buy any cold meats this week as I intended to cook this instead. Easy to do and superior quality. Last night I cooked 2 of them in my Home Made Hay Box. https://www.patsfood.org/home-made-hay-box/

Method


Firstly, I rinsed it off to reduce the saltiness.


Then I popped it in a pan and covered it in boiling water from the kettle. I brought it back to the boil and let it boil for about 5 mins.
I then turned off the heat and transferred it to my Hay Box.


I covered the pot with its lid, then a towel, with a towel and a lid for the insulation as leaving overnight. The hay box also has a lid so it is well insulated. (see haybox post)
It was 1 am when I did this!


If not leaving overnight I’d suggest 4 hours to cook. It was definitely well cooked and still hot but not boiling of course.


I popped the meat onto a clean tea towel to absorb water and sliced it. The result from 1200g uncooked bacon was 1 kilo of cooked gammon ham.
I’ve sliced it as best as I could and now have about 500g of slices and 500g of pieces, this can be used in stews, quiche, sandwiches, risotto, omelettes, or however I wish.
