Hi everyone. My name is Kat and I am from Poland.
This recipe is tweaked to what I had at home.
Ingredients
- 500g bread
- 300g ( that’s all I had but can use more) mixed dried fruit and peel from orange and lemon, soaked in some juice to plump it up
- 100ml strong dark tea
- 2 tbsp mixed spice
- 2 tsps cinnamon
- 2 tsps nutmeg
- 2 large eggs, beaten
- 100g brown sugar
- 100g of butter, melted
- About 200 ml milk to make texture I liked
- 2 tbsp demerara sugar
Method
- Tear the bread into a large mixing bowl and add the soaked fruit, peel and spice
- Pour in the milk, add eggs, sugar,tea and melted butter . Stir well, then set aside to soak. Heat the oven to 180C/160C fan/gas 4.
- I just lined 20cm tin with paper. Then put mixture in the tin and sprinkle with sugar on top.
- Bake for 1½ hrs until firm and golden. Heat the oven to 180C/160C fan/gas 4.
- Cover with foil if starts going dark too much (I baked almost 2h and never covered it)

just like my Lancashire Mum used to make ! many a time dashing in as a kid ( over 60 yrs ago ) and getting a slice to ” keep me on ” until tea time. had a Jamaican friend who did similar but with shredded coconut glace cherries and subtle spices. tried to replicate few years ago but i think the bread is different now.
I like the sound of the Jamaican Variety
