This Barley pudding has much the same consistency as rice pudding and is just so much more than a pudding!
You can have this for Breakfast, as a Pudding, or for Supper.
It is very cheap to make, nutritious, and easy-a definite winner.
Ingredients
- I used 200g of Pearl Barley 20p (49p for 500g in home Bargains)
- 1 pint of milk taken from a 4 pint container 27p
- 3 heaped dessert spoons of sugar about 5p
- Cinnamon, Mace or Garam Masala. I used Cinnamon and Garam Masala
I love my spices so used about a flat teaspoon of cinnamon and a heaped teaspoon of Garam masala. - Stir in some dried fruit if you wish.
Method
- Soak barley overnight
- Cook barley until fairly soft – just boil then simmer in boiling water.
- Drain barley
- Add 1 pint milk, spices and sugar
- Bring to boil
- Simmer until it thickens a little more.
- Remove from heat and let it thicken up – it will carry on cooking in the pan and swelling up even more.
- This makes about 12 servings! Yes! Loads and loads.
- Keep it in the fridge covered, and reheat some for breakfast or eat it cold with some fruit for a pudding.
- Serve it any way you like it.
Total cost approx 60p including the spices so just 5p per serving.
