Ingredients
- 500 g bread
- 300 g ( that’s all I had but can use more) mixed dried fruit and peel from orange and lemon, soaked in some juice to plump it up
- 100 ml strong dark tea
- 2 tsps mixed spice
- 2 tsps cinnamon
- 2 tsps nutmeg
- 2 large eggs, beaten
- 100 g brown sugar
- 100 g of butter, melted
- About 200 ml milk to make texture I liked
- 2 tbsp demerara sugar
Method
- Tear the bread into a large mixing bowl and add the soaked fruit, peel and spice
- Pour in the milk, add eggs, sugar,tea and melted butter . Stir well, then set aside to soak. Heat the oven to 180C/160C fan/gas 4.
- I just lined 20 cm tin with paper. Then put mixture in the tin and sprinkle with sugar on top.
- Bake for 1½ hrs until firm and golden.
- Cover with foil if starts going dark too much (I baked almost 2 hours and didn’t cover it but ovens vary.

Bread pudding can be made even more frugally than this!
My nan’s recipe:
Tear up stale bread and soak in water until soft and pulpy
Squeeze excess water out
Mix in dried fruit, sugar, and mixed spice if you have it, and a few knobs of marge
Put mixture into a greased ovenproof dish, dot with a few more knobs of marge, cook on low for a couple of hours until a knife put into the middle comes out clean
Take out of the oven and while it’s still warm sprinkle with sugar to give it a sweet ‘crunch’
Leave to cool before cutting yourself a big slab and scoffing with a mug of tea…
