Butternut Squash Risotto

I am just making Butternut Squash risotto.

This is one of those things where I am just “winging it”.

In the past, I’ve bought the Sacla sauce for this but it is rather expensive and I can do the whole meal for the price of one tiny jar. 

I’ve done enough for 3 portions with a lot of veg content-add extra rice to make it 4 servings.

Ingredients

  • Half a cooked Butternut squash (previously roasted, whole, in skin) 40p
  • 1 red pepper from a wonky bag 30p
  • 1/2 large onion (Home Bargains are cheapest) 10p
  • Veg stock cubes/powder-as little as 10p for 2 Sainsburys ones
  • Salt and pepper to taste
  • 300g of pudding rice/arborio 56p or long grain rice-400g 18p if you want to make 4-5 servings
  • Boiling water.
  • If you go for the cheapest options for 4 people it would cost approx £1.08 for 4 servings.
  • So, 27p per serving.
  • A jar of Sacla sauce would be about £2 per jar and I’d probably need two.
