Slow Cooker Recipe:
I had a recipe for this a while ago and this is and if it’s version (if I’ve got it is going in).
I also upped the ingredients from recipes I’ve seen because I was lucky enough to get a cheap 1kg gammon so wanted to make enough to freeze leftovers for another meal.
I estimate at the moment this should last us (2 adults and 2 small but greedy kids) for at least two full meals.
Ingredients
- Small gammon joint – I used un smoked but don’t think it matters unless you have a preference
- Large onion chopped
- Orange pepper and yellow pepper chopped – you could use any colour but I don’t like the green ones
- Two lumps frozen chopped garlic
- 2 tsp paprika
- 1 tsp lazy chilli – could add more but the kids need to eat it too
- Handful halved new potatoes – would have chopped and added a big one but didn’t have any others
- 1 tbsp mixed herbs
- 1 tin baked beans – you could substitute all the beans with baked beans but would probably want to rinse off the sauce so it isn’t too runny.
- 1 tin chopped tomatoes
- 1 tin kidney beans
- 1 tin black eye beans
- 1 tin spicy tomato soup – which has been gathering dust for over a year so had to go
- Handful of leftover sweet corn because it was there
Method
- Cut all visible fat from the meat and dump unceremoniously in the bottom of the slow cooker (mine is a 6.5 ltr)
- Chop and add to pan in order onions, potato, and peppers – only because I think they will cook best in this order.
- Mix everything else together and pour on top – or chuck it all in and save washing the bowl afterwards.
- Stick it in walk away and ignore it until dinner time.
- Before serving chop up the meat and stir it in.
- This went in about 8 this morning on low and will be eaten about 6-7 tonight.
I will check during the day and give it an hour on high if I think it needs it – it all depends on the cooker folks. Maybe either serve with crusty bread or maybe garlic bread.
After 4 hours is smells lovely and the sauce part tastes nice – maybe a little spicy for the boys but I’m thinking that when the meat and everything are all mixed in at the end it should be ok – tend to find hot spices mellow a bit when slow-cooked all day too.
