Flapjacks

Go on, admit it, you Batman-themed as you read that. No? Just me then ho-hum. Bet you did it now though. Anyhoo

Flapjacks, responsible for using up oats for generations. Chewy, filling and among the healthier snacks to chew on, they fill lunchboxes everywhere or did until lockdown in March 2020 but they will again. I love them, add things, flavour them and generally experiment with different things which I will list later.

But generally, the humble flapjack is put together like this!

You will need a traybake tray, saucepan, wooden spoon.

Oven Gas Mark 5/180c

Ingredients

  • 190 g baking margarine or butter
  • 100 g caster sugar
  • 6 tablespoons golden syrup
  • 400g porridge oats

Method

  • *Easiest way to measure your syrup. Get a mug of boiling water, put your spoon in it for 30 seconds and then use the hot, wet spoon to get the syrup out cleanly. Dip between spoons to keep the spoon hot.*
  • In a saucepan put the sugar, margarine and golden syrup.
  • Stir on a medium heat until the butter is melted.
  • Remove from the heat and stir in the oats mixing until everything is incorporated.
  • Tip into the tin and flatten lightly.
  • Bake in the middle of the oven until they are golden brown.

Remove from oven and IMMEDIATELY cut into slices without removing from the tin. When you have made the cuts, leave them to cool in the tin completely.

I do 16 bars but you can get 32 mini squares if you wish.

Pricing

  • Margarine: 26p
  • Caster sugar: 20p
  • Golden syrup: approximately 20p
  • Porridge oats: 30p
    Total: 96p and 6p for each bar (3p per bitesize square)

Different flavours

In the past, I have added the following into the saucepan

  • 1 tablespoon ginger
  • 1 tablespoon cinnamon
  • Handful sultanas
  • Put half the mix in the tin and sprinkle some cocolate chips in before you pur the top half on.
  • Or do the same and spread with jam then put the rest on.

I was once gifted a block of dates, I rolled the dates out and put it between the 2 halves of the mix, it was scrummy!
