Five Bean Chilli

Chilli and rice with nacho chips

There is nothing like a hearty warming chilli and this 5 bean chilli really hits the spot.

A great way of hiding some veggies as well for those who need to.

Ingredients

  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 1 red pepper, diced
  • 1 carrot, grated
  • 2 celery sticks, diced
  • 250 g mushrooms, halved and sliced
  • 2 tins chilli beans (KTC)
  • 1 tin chopped tomatoes
  • 1 tin pinto beans
  • 1 tin mixed beans
  • 1/4 pint Bisto (red original)
  • 1/2 veg stock cube
  • 1 tsp marmite
  • Splash of soy sauce
  • 1 tsp chilli powder
  • 1 heaped tsp smoked paprika
  • 1 heaped tsp ground cumin
  • 1 heaped tsp ground coriander
  • 1 tbsp Tom puree
  • 1 tsp sugar
  • 1 tbsp dried oregano
  • Salt and black pepper

Approx £4.00 in total

This made 9 large adult portions.

Method

  1.  Gently fry the onions in oil for 5 mins,
  2. Add the garlic and gently fry for 2-3 mins
  3. Then add the carrot and celery for another 3 mins
  4. Then just chuck everything else in and simmer for at least 30 mins
