Ingredients
1 kilo chicken pieces of your choice
1/2 teaspoon each of cumin, sumac, ground coriander, paprika, salt, turmeric, oregano, and olive oil
2 tbsp of olive oil
1 more tbsp of olive oil
1 chopped onion
3 garlic cloves,
a pinch of fresh ginger
2 green chili
2 cups of rinsed long grain or basmati rice
1 chicken stock cube
2 cups of boiling water
Method
1.)In a large bowl add your preferred chicken pieces
2.)Add 1/2 tsp of cumin, sumac, ground coriander, paprika, salt, turmeric, oregano, and olive oil
3.)Give it a good mix
4.) Cover and leave to marinate in the fridge for 30 minutes
5.) In a large pan add 2tbsp of olive oil
6.) Place chicken pieces inside
7.) Fry until you have a golden colour on each side
8.) Remove and set aside
9.) Add 1tbsp of olive oil
10.) Add 1 chopped onion,3 garlic cloves, a pinch of fresh ginger, and 2 green chili
11.) Fry on medium heat for 7 minutes
12.) Add 2 cups of rinsed rice
13.) Fry for another 2 minutes
14.) Place chicken pieces in a large cooking pot
15.) Followed by the rice
16.) Dissolve 1 chicken stock cube with 2 cups of boiling water
17.) Pour over the rice and chicken
18}Cover the cooking pot tightly with foil paper then the lid
19.) Bring to a boil until you don’t hear any bubbling sounds
20.) Lower heat and leave for a further 20 minutes on low
21.) Remove foil and leave uncovered for 5 minutes.
