Mediterranean style beef with Aubergine, potato and chickpeas
Ingredients
- 1 large onion
- 3 garlic cloves
- 1 green pepper
- 4 bay leaves
- Half teaspoon Paprika,, Cinnamon, Black pepper and Coriander
- 400g /500g pack of minced beef or meat of your choice
- 400g/500g Passata or sieved tomatoes/chopped tomatoes
- Vegetable stock powder or a stock cube of choice
- Cheddar cheese to sprinkle. Approx 70g
Method
- In a large saucepan fry 1 onion until translucent
- Add 3 chopped garlic cloves 1 green pepper and fry for a further 1 minute
- Add 4 Bay leaves, 1/2 teaspoon of paprika, cinnamon, black pepper, coriander and fry off
- Add your preferred meat (I used 500g minced beef)
- Fry for roughly 5 minutes until browned
- Add 1 pack of passata sauce and bring to boil
- Lower heat and allow to simmer for 5 minutes
- Add 1 teaspoon of vegetable stock powder and 400ml of boiled water * bring to boil *
- Lower heat and leave to simmer for 30 minutes until meat is cooked
- . * add salt to taste *
- Cut your Aubergine into cubes, place In a colander sprinkle with salt and set aside for 20 minutes
- Rinse the aubergine after 20 mins, tap dry and add this to the sauce.
- Add a tin of chickpeas-rinsed and drained
- Peel and dice 5 medium potatoes and add these to the pan for a further 20 minutes
- Empty this into an ovenproof dish *and sprinkle with Cheddar cheese.
- Place under the grill for 10 minutes
