Oven baked mince risotto

It’s the Weekend!

And as I said on Feed Yourself for £1 a day, I will attempt to put a recipe on every weekend.

My son has Aspergers and textures play a huge part in our meals. Something that has been a problem over time is rice. This seemed to cure a lot of the phobia.

Oven Baked Mince Risotto

  • Serves 1 to as many as you need
  • You will need: a frying pan, a saucepan, an ovenproof dish
  • Time: prep 10 mins cook 1hr
  • Oven 180 c Gas Mark 5

Ingredients

  • 1 onion chopped 7p
  • 2 garlic cloves 5p
  • A bit of oil for frying 5p
  • 500 g mince (sadly it doesn’t work with less) £1.50
  • 1 tablespoon soy sauce 5p
  • 1 litre stock (2 stock cubes) 6p
  • 400 g rice 40p
  • 2 tablespoon butter 5p
  • 50 g Grated cheese 17p

Method

  1. Make the stock and set it in the saucepan to boil.
  2. Once bubbling put the rice in for about 10 to 15 mins.
  3. It needs to be JUST cooked.
  4. Meanwhile, fry the onion and garlic until the onion is soft
  5. Add the soy sauce and mince
  6. Cook until the mince is browned and the soy sauce has evaporated

After cooking the mince

  1. Mix together the meat, the rice and half the cheese
  2. Grease the ovenproof dish
  3. Put the mince and rice mixture into the dish, spread knobs of the butter over the top
  4. Bake in the middle of the oven for 30mins until crusty on top

Pricing

£2.40 for the entire dish which is 60p a serving.

A lot of pricing depends on the mince, it varies across the range, I use pork and beef, but pork, turkey chicken all work well
