Ingredients
- 250 ml water
- 900 g mixed fruit
- 225 g sugar
- 170 g butter
- 230 g plain flour
- 1teaspoon bicarbonate soda
- 1 teaspoon mixed spice
- 2 eggs
Instructions
- Boil the water, sugar, fruit, and butter for 10 mins.
- Sift the flour then add the boiled ingredients and mix all in well.
- Always add in the eggs very last (DO NOT BOIL) as eggs will scramble. Mix in the eggs with the rest of the mixture.
- Pour into a grease proofed tin and cook for 45-60 mins. Cook at 150 degrees.
