Scotch Eggs (No Meat)

Quick and easy to make and super cheap.
Great with a salad, chips or on their own as a snack. You could even have one for breakfast.

If you buy Aldi stuffing or a larger box, you can cover 4 eggs. The smaller packets such as Asda or Sainsbury’s will cover 3 eggs.

Alternatively, make your own with some dry bread and herbs toasted lightly.

Ingredients

  • 3 hard boiled eggs
  • 1 pack of stuffing mix made up with water to a soft mix or make your own stuffing
  • A little oil to coat or 4-6 slices of bread-made into crumbs
  • A little water
  • 1 egg
  • 3 teaspoons sage
  • 1 onion finely chopped
  • extra herbs-spices if preferred.
  • I added a tablespoon of oil to the mix to help browning while in the oven or Actifry

Method

  • Make up stuffing mix to a soft consistency
  • Hard Boil eggs and allow to cool
  • Remove shells
  • Cover the eggs in the stuffing mix, moulding it around the eggs in your hands. Ensure the egg is fully covered.
  • Spray a little oil on the eggs if you wish them to brow a little more.
  • Bake the eggs in oven or air fryer.
  • Place on baking tray and bake in preheated 190 C / Gas mark 5 oven until lightly browned, about 25 minutes.
