Victoria Sandwich (Frugal Version)

Ingredients

  • 6 oz baking margarine
  • 6 oz granulated sugar
  • 2 eggs
  • 6 oz SR flour
  • 2 teaspoons baking powder
  • whipped cream and jam, if desired

Method

Heat oven to 190C/fan 170C/gas 5

  • Cream together margarine and sugar.
    I soften mine in the microwave.
  • Sift flour (for a better result) and beat eggs.
  • Add the eggs a little at a time along with 2 tablespoons of the flour and mix it into the margarine and sugar mixture-adding the flour stops the mix from curdling.
  • Add the rest of the flour after all of the eggs have been added.
    Add vanilla extract or flavouring if you wish. Bake gas mark 5 until slightly shrinking from the edges of the tins.
  • I have 8 inch tins which I spray with sunflower oil and line the bottom with greaseproof paper.
  • When you take the cakes out from the oven, make sure they are fairly cool before you take them from the tins.
  • I insert a knife around the edges of the tin first to make it easy to release the cake.
  • Then tip onto a wire rack to cool.
    Today I have filled mine with home made marmalade.
  • Add the whipped cream and jam, if desired
