Chickpea “Tuna”

Vegan and vegetarian chickpea 'tuna' sandwich

Chickpea “Tuna” is one of my favourite things as it’s tasty, cheap and healthy. This recipe is Vegan and does not actually contain any tuna.

Ingredients

  • 1 tin of chickpeas drained
  • 2 tablespoons vegan mayonnaise (if you want a vegan version)
  • A few shakes of malt vinegar
  • A little chopped red onion or spring onion
  • 1 heaped teaspoon capers
  • Sweet chilli sauce or Cranberry sauce
  • A teaspoon of Dijon mustard
  • A little bit of black pepper

Method

  • Mix it all up and season with pepper.
  • I made a sandwich using 2 slices of bread from a 36p loaf and added sliced beetroot.
  • There’s enough chickpea tuna to serve 2 people.
  • Cost for my whole sandwich was 23p and I’ll eat the other half of the chickpea tuna tomorrow – yum!

      Hi-this is a Vegan recipe which gives you a meal “something replicating tuna” and therefore does not actually contain any tuna.
