Nothing better than a hot bowl of homemade soup on a miserable day.
Made up a double batch of this last week for the freezer using homegrown butternut squash.

- 1 tbsp olive oil
- 2 celery sticks, chopped
- 1 onion, chopped
- 1 lb squash, chopped (I leave the skin on as it is edible and blends in fine once cooked)
- 1 tbsp curry powder
- 1 tsp smoked paprika
- 1 tsp turmeric (optional)
- Sprinkle of chilli flakes/powder or more if you want it spicy
- 2-3 garlic cloves
- 1 1/2 pints vegetable stock
- 2 tbsp Tom purée
- Black pepper to taste
Heat the oil in a pan, add the celery, onion and garlic and cook on a low/med heat until softened
Add in the rest of the ingredients and simmer for around 45mins
Once ready blitz smooth using a hand blender or food processor
