Fairy Cakes

Fluffy fairy cup cakes, for use in parties or afternoon tea

Making the most of my oven so I made fairy cakes.

We are not great cake eaters in this house so it is mainly for me.

I will freeze some. I’ve adapted this recipe to my own liking as I don’t like things too sweet.

Ingredients

  • 125g butter/marge/spread. I used Dairy free one from Home Bargains 15p
  • 100g sugar-I used granulated 7p
  • 2 eggs 16p
  • A bit of vanilla essence if you have it
  • Some water, equivalent of about 2 eggs to loosen up the mixture
  • 200g self raising flour. This is more than other recipes stated 9p
  • This is why you need the water or more eggs of course but this is the frugal version

Cost total 47p Under 3p each

  1. These freeze well. Just remove cakes from freezer as needed. They also store in an airtight container for a week

    But can use mixture to pour over fruit to make an upside down cake
