This is a very versatile family dish and can be made using any meat, Quorn, or Soy if you prefer.
I’ve used Pork as recently, it is the best value and a much larger pack than beef for less money.
If you want a smaller dish, just halve the ingredients. This one makes 6-8 servings
This can be frozen in portions if batch cooking
Ingredients
Fajita Seasoning
This can be a packet or make your own as follows
- Paprika 2 teaspoons
- Oregano 1 teaspoon
- Cumin 1 teaspoon
- Chilli 1teaspoon
- Garlic granules 1 teaspoon if liked
You can alter the quantities as you wish. I used 250g of pasta simply because it was half a bag, but this dish would happily take 350g for larger portions/more portions. I will serve mine with a side of vegetables or salad.
Main Ingredients
- 250g pasta shapes. Can make this more if you wish
- 750g of minced pork
- 2 onions diced
- 1red pointy pepper diced
- 1 yellow bell pepper, diced
- 3 closed cup mushrooms of a decent size or more if smaller, sliced
- 2 beef oxo cubes or whatever you prefer
- 1 tablespoon Worcestershire sauce (optional)
- 2 tins plum tomatoes or chopped plum tomatoes
- 120g of strong cheddar cheese (or some mozzarella as well)
Method
Lightly boil and drain the pasta . Al dente is best, as it will get cooked more later.
Sauté the chopped onions, mushrooms, and peppers. I use a little olive oil for this
Add the pork or whatever meat of your choice
Mix well together and brown a little in the pan
Stir together your spices in a bowl, then add them to the pan and mix well.
Now add your tinned tomatoes and chop or crumble your stock cubes into the mixture and mix well.
Cook for about 20 mins on the stove top, on a low heat with lid, stirring occasionally.
When the meat sauce is cooked, mix in the drained pasta.
Using a large dish or 2 smaller onesput half of the mix into the dish
Sprinkle with cheese
Add the rest of the mixture
Top with cheese.
Bake for approx 20 mins in a preheated oven 200C/180C Fan/Gas 6.
Serve with a side of Vegetables or salad. Mine made 6 servings but can be stretched to 8 with extra pasta and a tin of lentils using 2 dishes.
