Lentil Curry

Lentil curry, made from onions, tomatoes and mushrooms

Tonight I’ve made a lentil curry. I was going to do saag aloo but realised I’d cooked the lentils ready yesterday. This dish is about 6 portions and full price would cost approx £2.00. I got some reduced items so it cost me approx £1.10.

Rice-six portions priced at 4p for 100g portion-nice and filling. You could stretch it to 8 portions if you needed to. That would bring it in at 29p per portion including rice.

Ingredients and Method

  • Mushrooms (as many as you wish) about 150g-mine were reduced
  • 2 onions chopped. Mine was reduced
  • saute onions and sliced mushrooms
  • Add about 4 teaspoons curry powder(Asda big bag)
  • Cook for about 4 mins
  • Add two chopped chillies or a teaspoon chilli flakes or a teaspoon chilli powder
  • Add 100g cooked lentils-I use Home Bargains ones-89p per 500g
  • Add garlic to taste-about 4 cloves minced or some granules
  • 2 stock cubes of your choice-I use Sainsbury basics
  • 2 tins tomatoes-Home Bargains often have them at 25p. Mine were 30p each.
  • 1/4 tube tomato puree-I get mine in Aldi (about 37p a tube)
  • I’ve priced everything full price so it can be replicated.
  • Value rice from Aldi Asda or wherever at 40p per kilo.

As I don’t actually need to eat this cheaply I’ve portioned it into 6 portions.

Each portion weighs 307g without the rice so larger than your average ready meal.

The cost of 6 portions is 38p per portion
