Middle Eastern lentil soup

Ingredients

1 onion

2 plum tomatoes or normal tomatoes, chopped

1 teaspoon each of cumin, ground coriander, vegetable stock powder, paprika, oregano

1 tablespoon tomato puree

2 small cups of dried red lentils

1 litre boiling water

5 garlic cloves

chilli flakes (optional)

coriander leaves (optional)

Salt to taste

Method

Fry 1 onion until translucent
. Add 2 chopped tomatoes and fry for a further 2 min
. Add 1 teaspoon of cumin, ground coriander, vegetable stock powder,paprika , oregano and mix for a further 2 minutes
. Add 1 tablespoon of tomato paste and mix
. Add 2 small cups of red lentils and mix for a further 1 min
Add 1 litres of boiled water
. Bring to boil
. Lower the heat and leave to simmer for 30 minutes
. Keep mixing
. Add more water if needed
. In a separate pan add olive oil then fry 5 chopped garlic cloves and add to the lentil soup
. Give it a good mix and garnish with coriander leaves and some chilli flakes (optional)
Add salt to taste once cooked
