My new ‘invention’ Bakewell Muffins… really yummy and pence to make.
Ingredients
- 225 g SR Flour
- 75g Sugar
- 1 egg beaten.
- 90ml Oil
- 250 ml Milk.
- Almond extract to taste.
- A little Jam. I used Raspberry. Slithered Almonds if you like
Method
- Set oven to 180C
- Put all the dry ingredients into a bowl, add egg, milk oil and Almond extract to taste, Stir together quite briefly, it needs to be mixed but not smooth.
- Pop a spoonful of mixture in a Muffin case, drop a small tsp of jam on top then cover with a little more mixture. Sprinkle on the Almond slithers.
- Bake for 25 mins in the preheated oven. Cool on a wire rack
- These will freeze well.
- I made 15 Muffins and cost these to around 8p each. Nothing was reduced although the flour was basic range. The egg was free-range and the jam homemade although I added the cost of buying Jam.

Sorry for a late reply but I’s suggest looking up mug cake recipes for microwave on Google to get the timings right. It will depend on the power of your microwave.
