Bakewell Muffins

My new ‘invention’ Bakewell Muffins… really yummy and pence to make.


Ingredients

  • 225 g SR Flour
  • 75g Sugar
  • 1 egg beaten.
  • 90ml Oil
  • 250 ml Milk.
  • Almond extract to taste.
  • A little Jam. I used Raspberry. Slithered Almonds if you like

Method

  1. Set oven to 180C
  2. Put all the dry ingredients into a bowl, add egg, milk oil and Almond extract to taste, Stir together quite briefly, it needs to be mixed but not smooth.
  3. Pop a spoonful of mixture in a Muffin case, drop a small tsp of jam on top then cover with a little more mixture. Sprinkle on the Almond slithers.
  4. Bake for 25 mins in the preheated oven. Cool on a wire rack
  5. These will freeze well.
  6. I made 15 Muffins and cost these to around 8p each. Nothing was reduced although the flour was basic range. The egg was free-range and the jam homemade although I added the cost of buying Jam.
