I served this with homegrown rocket and pitta bread. To create this meal I required the following ingredients:
Ingredients
- Approx 8 Sausages-your choice how many. Any type
- 1 pack of Halloumi
- 1 large onion chopped
- 1 red pepper chopped
- 2 cans of butter beans
- 1/4 teaspoon dried coriander
- 4 tablespoons Tomato paste/puree
I’ve used extra Halloumi as I have loads stocked up at present. 1 pack of Halloumi or grilling cheese as a cheaper option is more than enough for this recipe. This meal can be created using any sausages. You could also make a meat-free version.
Method
- Fry 1 large onion until translucent then add 1 chopped red pepper
- Fry for a further 2 minutes
- Add sliced sausages and fry for a further 5 minutes
- In a bowl, dissolve 4 tablespoons of tomato paste with about 1/3 mug of.water
- Pour the diluted tomato paste over your sausages
- Add 1/4 teaspoon each of ground coriander, cumin, paprika, cayenne pepper, garlic powder, salt, and vegetable stock powder.
- Add 1/2 a cup of boiling water to the pan.
- Bring everything back to the boil, then lower heat and leave to simmer for 20 minutes
- Empty pan contents into an oven proof dish then add 2 tins of rinsed butter beans on top
- Slice 1 full Halloumi and place on a plate then place in the microwave for 1 minute until soft.
- Add your Halloumi on top of your beans and cover with foil and place in the oven for 30 minutes
- Remove foil and either put back in the oven or under a grill for about 6 minutes until Halloumi is golden brown.
- Serve with warm crusty bread or pitta
