Batch cooking today…Vegan Bolognese. This has given me 8 meals worth under £5.00
I have made up 1 lasagna and 7 portions of bolognese 😋
Ingredients
- 100g dried soya mince, rehydrated
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 sticks celery, diced
- 2 carrots, grated
- 1 courgette, grated
- 5 large white mushrooms, chopped
- 9 sundried tomatoes, chopped
- 1 tin of tomatoes
- 1 carton passata (I used homemade)
- 1 tbsp Tom purée
- 2 beef meat-free oxo cubes
- Tbsp oregano
- Tsp mixed herbs
- 1 tbsp smoked paprika
- A large splash of Henderson’s relish
- 1 tsp sugar
- Salt and pepper to taste
Method
- Rinse and rehydrate the soya mince in 300mls of vegetable stock for 10 minutes.
- In a pan with a little oil, cook your onions and celery for 5 minutes.
- Add in the carrot, courgette, mushrooms and garlic, and continue cooking for 3 minutes.
- Crumble in your OXO cubes and follow with the rest of the ingredients (including the soya mince) and any other left over stock.
- Simmer for approximately 30-40 minutes.
- Add in water if needed to loosen up the sauce during cooking.
- Serve and enjoy!
