Home-made Irish Traditional Boiled Fruit Cake

Boiled fruit cake made with dried fruits, with a slice removed, on a white dinner plate

Ingredients

  • 250ml water
  • 900g mixed fruit
  • 225g sugar
  • 170g butter
  • 230g plain flour
  • 1 tsp bicarbonate soda
  • 1 tsp mixed spice
  • 2 eggs

Method

  • Instructions: Boil the water, sugar, fruit, and butter for 10 mins.
  • Sift the flour then add the boiled ingredients and mix all in well.
  • Always add in the eggs very last (DO NOT BOIL) as eggs will scramble. Mix in the eggs with the rest of the mixture.
  • Pour into a greased, non stick tin and cook for 45-60 mins. Cook at 150 degrees.

      Hi-I’ve not frozen it myself but I regularly freeze different types of cake. I freeze it in portions in a plastic lunch box until needed. This should also freeze fine. I cannot see any reason it won’t.

      I’ve been trying to get in touch with the original author to find out but with no luck. I suggest finding a simlar recipe and using same size tin. to do this, add the weights of the total ingredients as this will indicate the volume the tin needs to hold. If I come up with a better answer I will of course edit this.
