Spicy Carrot and Tomato Soup with Dumplings

Spicy Carrot and Tomato Soup (Step 1 or 2)

Ingredients

  • 1 tin of tomatoes
  • 3 medium carrots,
  • 2 small/medium onions,
  • 2 stock cubes of choice
  • 3 cans refilled with water (1200 ml)
  • one or two teaspoons chilli powder,
  • a sprinkle of garlic powder or fresh garlic
  • 40g of broken spaghetti.

Method

  1. Chop veg and boil with everything but the pasta until carrots softening.
  2. Add pasta.
  3. Add dumplings, boil until dumplings are cooked.

The total cost is 54p without pasta and dumplings.
The total cost is 73p with them.

Easy Peasy dumplings (Step 2 of 2)

Ingredients

  • No sticky hands!
  • 8 oz SR flour
  • 3 tablespoons veg oil
  • 3 teaspoons dried herbs of your choice
  • Salt and pepper to taste
  • Water

Method

  1. Put flour in a bowl and drizzle in a spoonful of the oil.
  2. Mash it into the flour with a fork.
  3. Add the rest of the oil in the same way.
  4. Keep mashing and stirring until you see it looks like crumble.
  5. Add your dried herbs
  6. Add a little salt and pepper
  7. Gradually stir in water until you have a stiff dough.
  8. Roll it into a ball with the forkUsing a knife and fork, cut it in half
  9. Then cut in half again then each piece in half until you have 8 pieces.
  10. You can lift up each piece and pop it in your stew without touching or you can roll each into a ball if you prefer.

I hate sticky hands and don’t care what shape my dumplings are!
