Vegan Sausage Pie

Vegan sausage pie cut

Based on an idea by Jane Bartlett

My version of a pie I saw on another website and it turned out to be absolutely delicious!

I’ve adapted it to use Vegan sausages but of course, you can use whatever you prefer.

Ingredients

  • 400 g sausages or sausage meat (I used vegan ones) If using sausages you will need to remove them from their skins.
  • 85 g Saxo type stuffing made up as per instructions
  • 1 onion finely diced
  • 1 teaspoon of garlic granules
  • 1 tablespoon of gravy granules
  • 100 g cranberry sauce (optional). This is a good way to use it up after Christmas or Thanksgiving.
  • I used ready-made shortcrust pastry. However, you could make the Easy Peasy Pastry recipe instead. https://www.patsfood.org/easy-peasy-pastry/

If you are making your own pastry do this first, cover, and put it in the fridge to chill.

Method

  1. Mix everything together in a bowl except for the pastry.
  2. Line your pie dish or plate with pastry, then put the mixture on top.
  3. Add the pastry lid and crimp together. I dampen the edges with a little water for milk first. Use a brush or your fingers.
  4. Brush the top of the pie with milk/plant milk. I used plant milk
  5. Prick the top with a fork several times (see photos)
  6. Electric Fan oven 170 degrees. non-fan 180 degrees.
  7. I baked it for 45 minutes keeping an eye on it so as not to let the edges burn.

Makes up to 6 portions
