Another simple soup to make either in a soup maker or in a pan on the stove.
Soupmakers
I have a Russell Hobbs soup maker which I love because I can just throw the ingredients together and walk away.
Are soup makers really necessary? Of course not, but I like my kitchen gadgets and I know the soup won’t overflow or burn. It also makes the perfect quantity for me.
Ingredients
- 300 g raw carrots(3 large)
- 130 g raw onion
- 90 g red bell pepper
- Approx 5 g chilli pepper chopped with scissors
- I like chilli and this was half of a small red one
- 2 basics stock cubes or Vegan stock cubes
- 210 g sweet potato peeled weight (one small one)
Method
- Chop everything and add to soup maker
- Or put in a pan and cook with enough water to reach 1.6 litres in soup maker.
- I think approx 800 ml/1 litre in a pan.
- Set or smooth setting for Soup maker or cook until soft then blend
- Makes 4 x 400 ml servings
- Approx 95 calories per serving
- Cost approx 20 p per serving
