Sweet Potato, Spinach and Coconut Curry and Vegetable Biryani

Ingredients:

  • 200g (grams) of rice (dry weight), cooked
  • 3 large sweet potatoes l diced and roasted in oil in the oven for about 40 mins or until softened.
  • 2 Brown onions diced
  • 1/3rd of a pack of frozen peppers
  • 4 cloves of crushed garlic
  • 1 Tablespoon of minced ginger.

Method:

  • All cooked down for about 10 /15 mins with 4 cardamom pods
  • Added 3 teaspoons of Madras curry paste
  • 1 teaspoon of hot Madras powder
  • garam masala and turmeric.
  • Added 1 can of tomatoes and 5 blocks of frozen spinach and some water.
  • Add the rice, and mix together
  • Cooked down until the spinach defrosted (added a can of coconut milk.Added the cooked sweet potato salt some sugar and coriander).
